Oatmeal Muffins


150gm (6oz) plain flour
50gm (2oz) sugar
2 tsp baking powder
1 tsp salt
75gm (3oz) oatmeal
165ml 1/3pt milk
1 egg, beaten
4 tbsp honey or golden syrup
50gm (2oz) butter or margarine melted
75gm (3oz) raisins

Combine flour, sugar, baking powder, salt and oatmeal. Mix milk with egg, honey and melted butter and stir into flour mixture. Add raisins and pour into a muffin tin (holding 12) filling the greased muffin tin to two-thirds full. Bake in a moderately hot oven (400ºF, 200ºC), Gas mark 6) for 20 minutes. Serve warm with butter.
