Greek Potatoes With Feta Cheese

900g (2lb) potatoes, peeled and sliced
1 green pepper, sliced
2 courgettes (about 225g/8oz) sliced
85g (3oz) feta cheese, cut into small cubes
freshly ground black pepper
1 tbsp Greek yoghurt
2 tbsp skimmed milk
1 tbsp olive oil (preferably extra virgin)

Method:
1. Preheat the oven to 375F/190C gas mark 5. Lightly grease a large ovenproof dish.
2. Boil the potatoes in lightly salted water for 10 minutes.
3. Layer the potatoes, pepper, courgettes and cheese into the dish, sprinkling some peppers in between.
4. Mix the yoghurt with the milk and pour over the vegetables.
5. Drizzle the oil over the top, cover the dish with foil and bake until the vegetables are cooked (about 30 minutes).
    Note: Feta cheese is very salty which enables you to use the minimum amount of salt when preparing the dish. It is important to cut down on salt as it is associated with high blood pressure.
    This recipe is suitable for diabetics, vegetarians and for those on a low-fat or gluten-free diet.
