Matzo Meal Dumplings

3 large eggs
1 teaspoon salt
dash of ginger powder
3 tablespoons oil
6 heaped tablespoons matzo meal
Boiling salted water

Beat eggs with salt, ginger and oil. Gradually add matzo meal and mix until dough is firm. Let dough rest 1 hour.

Wet hands and form dough into 1 ½-inch balls. Gently place in boiling salted water and simmer 20 minutes.

Makes about 12 dumplings.

Serve with Jewish Chicken soup .
